Description

Legend has it that Saint James, one of Jesus’ twelve apostles, saved a knight from drowning and when he emerged from the water, he was covered in shells, thus giving us the name “shells of Saint James.” The scallop then became the symbol of Saint James, and carved shells could be found on the front of houses used by pilgrims to indicate a stopover point. In France today, they celebrate National Coquille St. Jacques day on May 16th to keep the tradition of Saint James’ selflessness alive. We have taken this age old recipe and transformed it into a delicious puff pastry combining jumbo helix scallops, white white, butter, and enough garlic to make Saint James himself proud.
